Ingredients

The ingredients are:
  • 4 potatoes (such as russets or yukon gold potatoes), cut into chunks
  • 4 tablespoons butter
  • 1/2 cup light cream (or half and half)
  • 1/2 small green cabbage
  • 6 scallions, chopped
  • Salt
  • Pepper

How to Make

  • Step 1: In a saucepan with boiling salted water cook the potatoes for 15-20 minutes; drain and mash with a potato masher until smooth. Season with taste with salt and pepper and then add the butter and cream; stir to combine. Keep warm while you cook the cabbage.

  • Step 2: Cut the cabbage into quarters, removing and discarding the core, and then shred the leaves. In a saucepan of boiling salted water cook the cabbage for a minute or two or until soft; drain.

  • Step 3: In a serving dish mix the cabbage and potatoes together and stir in the scallions, along with charms if using. Season with salt and pepper.
