Ingredients

The ingredients are:
  • 3 pounds russet potatoes, peeled, diced
  • 1 cup yellow onions, minced
  • 2 cloves garlic, smashed
  • 2 tablespoons olive oil
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1 1/4 teaspoons ground sage
  • 8 ounces light cream (1 cup half and half), warmed
  • Topping
  • 1 tablespoon chives, minced
  • 2 scallions, minced
  • 4 ounces white cheddar cheese, shredded
  • 3 ounces bacon, crumbled, cooked (3 slices)

How to Make

  • Step 1: Saute onions until translucent.

  • Step 2: Add garlic.

  • Step 3: Add broth and potatoes.

  • Step 4: Season to taste.

  • Step 5: Simmer 30 minutes.

  • Step 6: Use stick blender and blend until smooth.

  • Step 7: Add warmed 1/2 and 1/2.

  • Step 8: Season to taste.

  • Step 9: In bowl place a dab of the cheese on one side across bowl then circle it with a ring of bacon and scallions then chives leaving one side of the bowl clear on top.
