Step 1: Melt butter in heavy saucepan.
Step 2: Add onion, rice, and mushrooms, sauté until rice starts to brown.
Step 3: Add stock, parsley, salt, and pepper seasoning to taste and bring to boil.
Step 4: Reduce heat to low and cook, covered, 25 minutes or until all liquid is absorbed.
Step 5: Meanwhile, Spray a 1-quart mixing bowl with non-stick spray.
Step 6: Pack rice into bowl tightly.
Step 7: Keep warm while preparing tomatoes.
Step 8: Split tomatoes in half.
Step 9: Combine melted butter, bread crumbs, cheese, salt, pepper, and paprika seasoning to taste and mix well.
Step 10: Sprinkle crumb mixture over tomatoes and broil in preheated broiler 4 inches from heat until golden.
Step 11: Un-mold the rice onto warm serving dish and surround with tomatoes.
