Ingredients

The ingredients are:
  • 240 grams zucchini, fresh grated coarsely (2 zucchini)
  • 35g dried breadcrumbs. packaged not fresh (1/3 cup )
  • 2 tablespoons, finely grated parmesan cheese
  • 1 green onion, sliced thinly (spring onion)
  • 1 egg, beaten lightly
  • 1/2 tablespoon finely chopped fresh flat-leaf parsley
  • 1/2 tablespoon chives, fresh, chopped finely
  • 1/4 teaspoon dried chili flakes
  • Cooking spray
  • Relish to serve

How to Make

  • Step 1: Place the zucchini in strainer, let drain for 10 minutes and then squeeze excess water from zucchini. Combine the zucchini, breadcrumbs, parmesan cheese, green onion, egg, parsley, chives & chili flakes in medium bowl and season. Shape mixture into two patties.

  • Step 2: Spray a non-stick frying pan with the cooking spray. Place pan on a medium-high heat. Place in the shaped burgers and cook until golden on both sides and heated through.

  • Step 3: Remove burger from the pan and serve immediately with some relish.

  • Step 4: Burger patties can be reheated in the microwave, if needed.
