  • 1 teaspoon parsley, minced

  • 2 ounces bacon, minced
  • 2 mushrooms, sliced
  • 1 green onion, minced
  • 4 cherry tomatoes,quartered
  • 1/4 cup fresh baby spinach

How to Make

  • Step 1: Have filling prepped.

  • Step 2: Add bacon to the pan.

  • Step 3: Mix up eggs seasoning to taste.

  • Step 4: Add onions, mushrooms to bacon.

  • Step 5: Cook until softened.

  • Step 6: Add spinach and tomatoes here if you wish or later in step 12.

  • Step 7: Season lightly.

  • Step 8: Remove to bowl.

  • Step 9: Drain excess grease.

  • Step 11: Cook until almost set on one side add bacon mixture.

  • Step 12: Sprinkle over tomatoes.

  • Step 13: Fold over cover and finish cooking.
