Ingredients

The ingredients are:
  • 2 pounds lamb shoulder, cut into 1 ½" pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons oil
  • 2 cups onion ,sliced
  • 1 clove garlic, smashed
  • 4 cups beef broth
  • 1 bottle(12 ounces) guinness beer
  • 1 bay leaf
  • 3 carrots chopped into 3" pieces
  • 2 pounds potatoes, peeled,large chunks
  • 8 ounces whole white mushrooms,small
  • 1/2 teaspoon dried thyme
  • 1/4 cup parsley ,chopped
  • 2 tablespoons butter
  • 2 tablespoons flour

How to Make

  • Step 1: Season lamb heavily

  • Step 2: Heat oil in stock pot

  • Step 3: Add lamb

  • Step 4: Brown

  • Step 5: Add onions

  • Step 6: Cook until translucent

  • Step 7: Add garlic

  • Step 8: Add beer

  • Step 9: Add stock

  • Step 10: Add bay leaf and thyme

  • Step 11: Simmer an hour until meat is tender

  • Step 12: Add veggies

  • Step 13: Simmer 30 minutes more adding water as needed

  • Step 14: Last 5 minutes mix butter and flour

  • Step 15: Add to stew cook until thickened

  • Step 16: Take out Bay leaf

  • Step 17: Season to taste

  • Step 18: Stir in parsley
