Step 1: Place the fruit preserves in a small bowl. Add the minced chipotle to the bowl, a little at a time, until you reach your desired spiciness level.
Step 2: Set aside half of the sauce. Season the chops with salt, then brush with the remaining sauce.
Step 3: Lightly grease a cast iron grill pan. Place over medium flame until pan is hot. Grill the chops, covered, for 4-5 minutes per side until done. (145F). Let rest a few minutes. Brush with the reserved sauce and serve.
