Ingredients

The ingredients are:
  • 1 pound spaghetti, broken in half
  • 6 cups water, boiling
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1 cup onions, chopped
  • 15 ounces black beans (1 can)
  • 10 ounces Rotel tomatoes and chilies (1 can)
  • 1 ounce taco seasoning (1 packet)
  • 2/3 cup chunky salsa
  • 2/3 cup water
  • 12 ounces Mexican blend cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Garnish
  • 8 ounces sour cream
  • 2 green onions, minced

How to Make

  • Step 1: Preheat oven to 350 F.

  • Step 2: Pam spray a 9x13 baking dish.

  • Step 3: Cook pasta until al dente in heavily salted boiling water.

  • Step 4: Meanwhile, brown beef and onions.

  • Step 5: Add taco seasoning and water, then bring to a boil.

  • Step 6: Reduce heat.

  • Step 7: Add black beans, tomatoes and salsa.

  • Step 8: Stir well.

  • Step 9: Add 1 cup cheese and combine until melted.

  • Step 10: Season to taste with salt and pepper.

  • Step 11: When pasta is cooked, drain and add back to pot.

  • Step 12: Add meat mixture and mix well.

  • Step 13: Transfer to baking dish cover and bake for 20 minutes.

  • Step 14: Uncover, add rest of cheese and bake for 5 additional minutes until melted.

  • Step 15: Add garnish on the side.
