  • 1 cup onion,chopped
  • 1 clove garlic, minced
  • 2 cans ( 30 ounces) mixed vegetables,(15 ounces each), undrained
  • 1 can (14 ounces) tomatoes,diced, undrained
  • 3 cups vegetable broth
  • 4 ounces dry long grain white rice,(1/2 cup)
  • 1/2 teaspoon italian seasoning
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon black pepper, to taste

How to Make

  • Step 1: Heat oil in a Dutch oven over medium-high heat.

  • Step 2: Add onion saute until translucent

  • Step 3: Add garlic and cook until softened, stirring frequently.

  • Step 4: Add remaining ingredients; bring to a boil over high heat.

  • Step 5: Reduce heat and simmer, uncovered, 30 minutes

  • Step 6: Check seasoning and season to taste

  • Step 7: Add more water if you wish thinner
