Step 1: Preheat oven to 350°F. Grease 9X13-inch baking pan.
Step 2: In large bowl, beat together eggs, sugar and oil until light and fluffy.
Step 3: Stir in flour, cinnamon, salt and baking soda. Gently fold in apples and nuts.
Step 4: Transfer mixture to baking pan. Bake 45 minutes or until toothpick inserted in center comes out clean.
Step 5: Sprinkle with confectioners sugar while warm and serve with vanilla ice cream, if desired. Store leftovers in an airtight container.
