  • 1 cup old-fashioned oats
  • 1 large ripe banana
  • 2 eggs
  • 2 tablespoons pure maple syrup
  • 1 teaspoon baking power
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/4 cup dark chocolate chunks, plus more for topping

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Coat two 8-ounce ramekins with nonstick cooking spray.

  • Step 3: Add oats, banana, eggs, syrup, baking powder, cardamom, cinnamon and salt to blender; blend until smooth. Stir in 1/4 cup chocolate chunks.

  • Step 4: Transfer mixture evenly to prepared ramekins, topping each with a few additional chocolate chunks.

  • Step 5: Place ramekins on baking sheet, and bake 20 minutes, until oat mixture puffs up and tops are golden brown. Serve warm, storing any leftovers in an airtight container.,
