  • 1 pound shrimp, cooked, shelled
  • 4 eggs, hardboiled, peeled, chopped coarsely
  • 2 cups frozen green peas
  • 2 radishes, sliced
  • 1/2 cup tomato, diced
  • 2 tablespoons fresh chives, minced
  • 4 tablespoons fresh dill, minced
  • 4 tablespoons fresh parsley, minced
  • Dressing
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 4 ounces heavy cream, whipped to stiff peaks (1/2 cup)
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper

How to Make

  • Step 1: Lightly toss all of the salad ingredients in a medium-size bowl.

  • Step 2: Combine all dressing ingredients, pour half over the salad, cover, and refrigerate for at least 1 hour.

  • Step 3: Refrigerate for at least 1 hour.

  • Step 4: Cover and refrigerate the remaining dressing.

  • Step 5: Just before serving, toss the salad well, adding a little more dressing, if necessary.

  • Step 6: Also taste for salt and pepper and adjust as needed. Pass the extra dressing separately.
