  • 1/4 cup olive oil
  • 4 ounces bacon,(4 strips), minced
  • 1 cup white onion,diced
  • 2 cloves garlic, smashed
  • 1/4 teaspoon chili flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1 1/2 cups frozen kale
  • 1 lemon,juice,zest
  • 1 can(15 ounces) kidney beans
  • 1 can (15 ounces ) cannelloni beans
  • 8 cups chicken stock
  • 8 ounces dry macaroni
  • 4 ounces parmesan cheese, grated

How to Make

  • Step 1: In large pot

  • Step 2: Combine olive oil and bacon.

  • Step 3: Cook for three minutes.

  • Step 4: Add onions

  • Step 5: Add cloves garlic, chili flakes, seasoning to taste .

  • Step 6: Continue to cook over medium heat, stirring constantly, until garlic is lightly toasted.

  • Step 7: Add kale and the zest and juice from 1 lemon and continue cooking until greens wilt.

  • Step 8: Add canned beans

  • Step 9: And 8 cups chicken stock.

  • Step 10: Bring to a boil over medium-high heat, then lower to simmer for 10 minutes.

  • Step 11: Add macaroni and cook until soft.

  • Step 12: Stir in grated Parmesan cheese off heat.
