Step 1: In a large saucepan
Step 2: Cover potatoes with cold water by an inch.

Step 8: In a small bowl, whisk together the olive oil, vinegar, mustard ,caraway seeds and salt and pepper to taste.
Step 9: Pour the dressing over the potato mixture and gently toss.
