Step 1: Place the stew meat in the slow cooker, then add in the remaining ingredients (except the cornstarch and green onions). Stir.
Step 2: Cover and cook on low for about 6-8 hours or high for about 4-5 hours. All slow cookers are different; meat should be fork-tender when ready to eat.
Step 3: To thicken the sauce, take about half a cup of the cooking broth and whisk it together with the cornstarch in a small sauce pan. Cook on low until the sauce thickens, then add it back into the slow cooker. Stir well, until the meat and veggies are fully coated.
Step 4: Garnish with green onions, tomatoes, cilantro and carrots.
