Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 7 ounces dry white rice
  • 1/2 cup onions, chopped
  • 1 carrot, grated
  • 1 clove garlic, smashed
  • 1 jalapeno
  • 1 can (7 ounces) tomato sauce
  • 2 cups chicken broth
  • 1/8 teaspoon cumin
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 8 ounces raw shrimp, peeled, diced roughly
  • 1/4 cup water

How to Make

  • Step 1: Heat the oil

  • Step 2: Add the rice

  • Step 3: Stir constantly for 3 minutes.

  • Step 4: Add the carrot and onion.

  • Step 5: Cook for 2 minutes.

  • Step 6: Add the garlic, cumin, salt, pepper,tomato sauce, and chicken broth.

  • Step 7: Stir to combine.

  • Step 8: Slice through a jalapeno and add to the pot whole.

  • Step 9: Cover and cook on medium-low heat for 10 minutes

  • Step 10: Don't stir the rice.

  • Step 11: Add the shrimp and 1/4 cup water.

  • Step 12: Cover and cook for 2 minutes.

  • Step 13: Leave the lid on and turn heat off.

  • Step 14: After 5 minutes, uncover and test the rice.

  • Step 15: It should be fluffy.

  • Step 16: If not, add a splash of water and cover again for 5 more minutes with the heat off.

  • Step 17: Check for seasoning mix the shrimp through rice
