Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 cup bell pepper, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 cup onion, chopped
  • 1/4 cup cilantro, minced
  • 1 garlic clove, smashed
  • 1 cup frozen green beans
  • 4 ounces mushrooms
  • 1 tablespoon tomato paste
  • 1/2 teaspoon turmeric
  • 1 teaspoon oregano
  • 1 tablespoon dried parsley
  • 7 ounces red lentils,(1 1/4 cup)
  • 4 ounces frozen kale
  • 1 can(15 ounces) tomatoes
  • 6 cups vegetable stock
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • Garnish:
  • 1 tablespoon fresh basil, minced
  • 14 ounces cooked white rice,(2 cups)

How to Make

  • Step 1: Heat oil saute peppers and onions

  • Step 2: Add carrots and celery

  • Step 3: Add mushrooms and garlic

  • Step 4: Add turmeric and tomato paste

  • Step 5: Add stock and tomatoes

  • Step 6: Add lentils and herbs season to taste

  • Step 7: Simmer 60 minutes then add frozen veggies

  • Step 8: Simmer 30 minutes more adding water as needed

  • Step 9: Season to taste

  • Step 10: Put lentils in bowl add serve with rice you have packed in a Pam sprayed ramekin,(round coffee cup)

  • Step 11: Centered on top basil on top
