Ingredients

The ingredients are:
  • 3 tablespoons butter, melted
  • Juice of 2 limes
  • 2 tablespoons Creole seasoning
  • 2 pounds (6 fillets) fresh white flesh fish (cod, tilapia, haddock, halibut, etc. )
  • 1 (16 ounce) can black beans, drained
  • Kosher or sea salt, to taste
  • 2 tablespoons sour cream
  • 1 medium ripe tomato, chopped
  • 1/2 cup hot salsa
  • Sour cream (for serving, optional)
  • Cilantro and/or scallions, chopped, (for serving, optional)

How to Make

  • Step 1: Combine the butter, lime juice and Creole seasoning. Marinate fish in butter mixture; set aside.

  • Step 2: Meanwhile, process black beans 5 seconds in a food processor, just until chopped; place in bowl. Add salt to taste. Stir in 2 tablespoons sour cream; set aside.

  • Step 3: Combine chopped tomato and salsa; set aside.

  • Step 4: Place fish in a cast iron skillet. Broil fish until white and flaky which should take between 6 - 10 minutes, depending on the thickness of your fillets, or until the internal temperature of the cod reaches 130-140°F on a meat thermometer inserted into the center of the thickest portion of a fillet.

  • Step 5: To serve, layer black bean sauce, broiled fish, and salsa mixture on a plate. Garnish with sour cream and chopped cilantro and/ or scallions if desired.
