Step 1: Combine the butter, lime juice and Creole seasoning. Marinate fish in butter mixture; set aside.
Step 2: Meanwhile, process black beans 5 seconds in a food processor, just until chopped; place in bowl. Add salt to taste. Stir in 2 tablespoons sour cream; set aside.
Step 3: Combine chopped tomato and salsa; set aside.
Step 4: Place fish in a cast iron skillet. Broil fish until white and flaky which should take between 6 - 10 minutes, depending on the thickness of your fillets, or until the internal temperature of the cod reaches 130-140°F on a meat thermometer inserted into the center of the thickest portion of a fillet.
Step 5: To serve, layer black bean sauce, broiled fish, and salsa mixture on a plate. Garnish with sour cream and chopped cilantro and/ or scallions if desired.
