Step 1: Preheat the oven to 180C or160C fan-forced.
Step 2: Trim the base of 1 onion so as it can sit flat & using a small sharp knife, cut a cross in the top of onion. Carefully open up the top of the onion, peeling back just a little of the onion skin and insert 1 bay leaf & a small sliver of the butter.
Step 3: Place onion in a roasting pan, with the top side up. Repeat with remaining onions and bay leaves.
Step 4: Drizzle each onion with 1 tablespoon beer & season with salt and pepper. (You will be using only half the beer as onions will be drizzled again halfway through cooking).
Step 5: Cover the pan tightly with foil & roast for 3/4 to1 hour or until onions and tender, drizzling with remaining beer halfway through cooking.
Step 6: Remove the foil & roast onions for a further 10 minutes or until skins are crisp.
Step 7: Serve.
