Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 1 clove garlic, smashed
  • 1 teaspoon ginger, grated
  • 2 scallions, white and green parts separated and thinly sliced
  • 8 ounces mushrooms, chopped
  • 1/2 cup frozen peas and carrots
  • 14 ounces cooked white rice,(3 cups)
  • 2 tablespoons sriracha
  • 1 1/2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper,to taste

How to Make

  • Step 1: Combine sauces in one bowl

  • Step 2: Heat oil and swirl to coat the base of wok.

  • Step 3: When hot

  • Step 4: Add the garlic, ginger, and scallion whites and cook for about 30 seconds, until just aromatic.

  • Step 5: And the mushrooms and stir-fry for about 1 minute.

  • Step 6: Add peas and carrots

  • Step 7: Stir in the Sriracha, soy sauce, and sesame oil.

  • Step 8: Toss in the rice and break up any remaining clumps with a spatula.

  • Step 9: Cook until warmed

  • Step 10: Season to taste

  • Step 11: Mix in green parts of onion at very last
