Ingredients

The ingredients are:
  • 4 slices lean bacon, ( I like double- smoked)
  • 2 1/4 cups unbleached all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shortening or lard
  • 1/2 cup grated aged cheddar cheese
  • 1 cup (approximately) milk

How to Make

  • Step 1: Fry bacon until crisp; drain well on paper towel; crumble and set aside.

  • Step 2: In a large mixing bowl combine dry ingredients.

  • Step 3: Using pastry blender cut in shortening until mixture is crumbly.

  • Step 4: Add cheese and bacon.

  • Step 5: Gradually pour in milk stirring with a fork to make a soft dough.

  • Step 6: Turn dough out on floured work surface and knead for 8-10 turns.

  • Step 7: Roll out 1/2 inch thick and cut in squares.

  • Step 8: Transfer to floured baking sheet.

  • Step 9: Bake at 450° F for 10-15 minutes.

  • Step 10: Serve warm with butter.
