  • 2 cups apricot nectar
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 3 eggs, separated, room temperature
  • 8 tablespoons rum
  • 8 (3 inch) cinnamon sticks

How to Make

  • Step 1: In a bowl or blender combine first 3 ingredients plus egg yolks and blend until smooth.

  • Step 2: In a bowl of an electric mixer beat the egg whites until stiff but not dry. Whisk egg whites into the nectar mixture. Refrigerate until chilled.

  • Step 3: Divide eggnog among 8 glasses. Pour 1 tablespoon rum into each glass. Garnish with cinnamon stick.
