Step 1: In a medium saucepan, combine the water, honey, and cinnamonsticks. Bring to a boil over high heat. Boil 3-5 minutes, then remove from the heat. Stir in the vanilla extract. Let cool. Will keep, refrigerated, up to 2 weeks. Makes enough for 6 drinks.
Step 2: Rim the glass with the chocolate sauce and vanilla sugar, if using.
Step 3: Fill the glass with ice. Add the vodka, Kahlua, espresso, and cinnamon syrup. Stir to combine. Pretty with a garnish of a cinnamon stick.
Step 4: For truly decadent: Add a squirt of chocolate syrup to the cocktail at the very end. Gently swirl (do not mix in).
