Ingredients

The ingredients are:
  • 1/8 cup olive oil
  • 1/2 cup onion, diced
  • 1 clove garlic, smashed
  • 1/2 teaspoon cumin
  • 1 teaspoon curry powder
  • 1/4 teaspoon Italian seasoning
  • 2 carrots, peeled ,sliced
  • 1 can (14 ounces) fire roasted diced tomatoes
  • 1 can (15 ounces)corn
  • 7 ounces dried lentils,(1 cup)
  • 1 teaspoon vegetable bouillon
  • 6 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/16 teaspoon crushed red pepper flakes
  • 1 bag (6 ounces) frozen chopped kale,(1/2 bag)
  • 2 tablespoons lemon juice

How to Make

  • Step 1: Heat oil in stock pot

  • Step 2: Add onion

  • Step 3: Cook until translucent add spices

  • Step 4: Add garlic

  • Step 5: Add cans rinsed out with water

  • Step 6: Add everything else but kale and lemon juice

  • Step 7: Simmer 45 minutes adding water if needed

  • Step 8: Last 15 minutes add kale and lemon juice simmer season to taste
