Ingredients

The ingredients are:
  • 1 kg free-range chicken
 thighs
  • 1 tbsp garlic , finely grated

  • 1 tbsp fresh ginger , finely grated

  • 1 tbsp fresh red chilli , finely grated

  • 1 tbsp tomato puree

  • 1 tsp ground coriander

  • 1 tsp turmeric

  • 1 tsp garam masala

  • 1 tsp ground cumin

  • 3 tbsp natural yoghurt

  • 1 lemon , zest and juice of

  • 1 level tsp sea salt

How to Make

  • Step 1: Take the skin off the chicken - slash a few cuts on the top of each piece (not too deep) and pat dry

  • Step 2: Mix all of the ingredients well in a large enough bowl to be able to rub marinade on the chicken making sure that it gets into the slashes - leave to marinade for as long as you can - at least a few hours

  • Step 3: 3. cook it at 190c for about 45 minutes or cook well on a barbecue
