Ingredients

The ingredients are:
  • 1 tablespoon butter
  • 1 cup steel cut oats
  • 3 cups boiling water
  • 1-2 teaspoons cinnamon
  • 2 tablespoons brown sugar
  • 1/4 teaspoon Kosher salt
  • 1/2 cup whole milk
  • 1/2 cup plus 4 tablespoons low-fat buttermilk
  • 4 tablespoons brown sugar (for topping each 4 bowls. More or less to your liking)
  • 1 teaspoon cinnamon (for topping each 4 bowls)

How to Make

  • Step 1: In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.

  • Step 2: Combine the milk and half of the 1/2 cup buttermilk with the oatmeal. Stir in the brown sugar (2 T) and the cinnamon (1 or 2 tsp.) gently to combine and cook for an additional 10 minutes. Spoon into four serving bowls and top with remaining buttermilk (1 tablespoon per each 4 bowls), brown sugar and cinnamon divided and sprinkled on top of each bowl. Enjoy!
