Step 1: In large saucepan,
Step 2: Boil potatoes in enough water to cover for 30 minutes or until tender.
Step 3: Drain
Step 4: And cool just enough to handle.
Step 5: Peel and cut into 3/4-inch cubes.
Step 6: In large bowl, combine warm potatoes, pickles, celery, green onions, and red pepper.
Step 7: Dressing:
Step 8: In small bowl, mix mayonnaise, mustard, salt, and pepper until well blended.
Step 9: Pour over potato
Step 10: Mixture and toss lightly to coat evenly.
Step 11: Cover and refrigerate at least 2 hours. (Overnight)
