Ingredients

The ingredients are:
  • 1 1/2 pounds ground beef
  • 6 ounces uncooked white rice,(3/4 cup)
  • 4 teaspoons salt,to taste
  • 1 1/2 teaspoons pepper,to taste
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons dried savory
  • 1/4 cup flour
  • 8 cups water,(2 1/2 quarts)
  • 7 scallions, sliced, (white part only)
  • 1 cup green bell pepper, chopped
  • 3 carrots, peeled ,sliced
  • 1 can( 16 ounces) tomatoes,chopped
  • 2 yellow banana chilies, seeded,diced
  • 3/4 teaspoon tabasco
  • 1/4 cup fresh parsley, minced
  • 3 eggs
  • 2 lemons,juiced
  • 1/4 teaspoon dried red pepper flakes
  • 2 ounces parmesan cheese,fresh grated

How to Make

  • Step 1: Combine water, scallions, and green pepper, carrots, tomatoes, 2 teaspoons salt, and 1 teaspoon pepper in large kettle.

  • Step 2: Cover, bring to a boil, reduce heat and simmer 30 minutes.

  • Step 3: While you're simmering

  • Step 4: Combine turkey, rice, 2 teaspoons salt, 1/2 teaspoon pepper, paprika, and savory.

  • Step 5: Mix lightly but thoroughly.

  • Step 6: Form into 1 inch meatballs, then roll in lightly seasoned flour.

  • Step 7: After 30 minutes

  • Step 8: Add meatballs to soup, cover, bring to a boil again. Reduce heat and simmer 20 minutes.

  • Step 9: Add chilies, cover, and simmer 40 minutes or until rice in meatballs is cooked.

  • Step 10: Add parsley during last 5 minutes of cooking.

  • Step 11: Taste and adjust seasonings.

  • Step 12: Beat eggs with lemon juice.

  • Step 13: Add a little hot liquid to egg mixture, then slowly stir into soup.

  • Step 14: Stirring soup in a circle

  • Step 15: Stir in red pepper flakes and cheese
