Ingredients

The ingredients are:
  • 2 tablespoons peanut oil
  • 4 ounces small shrimp, shelled, deveined, and cut into ½-inch pieces
  • 32 ounces cooked white rice,(4 cups, cold)
  • 1 cup frozen peas
  • 8 ounces ham,(1 cup),diced
  • 1/2 cup scallions, chopped
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground white pepper

How to Make

  • Step 1: In hot wok

  • Step 2: Swirl in 1 tablespoons of the oil,

  • Step 3: Add the shrimp, then, using a metal spatula, stir-fry 1 minute or until the shrimp just turn color but are not cooked through.

  • Step 4: Swirl in the remaining 1 tablespoon oil,

  • Step 5: Add the rice, and peas and stir-fry 2 to 3 minutes breaking up the rice with the spatula until it is heated through.

  • Step 6: Add the ham, scallions, sprinkle on the salt and pepper, to taste

  • Step 7: Stir-fry 1 minute until well combined.
