Step 1: In hot wok
Step 2: Swirl in 1 tablespoons of the oil,
Step 3: Add the shrimp, then, using a metal spatula, stir-fry 1 minute or until the shrimp just turn color but are not cooked through.
Step 4: Swirl in the remaining 1 tablespoon oil,
Step 5: Add the rice, and peas and stir-fry 2 to 3 minutes breaking up the rice with the spatula until it is heated through.
Step 6: Add the ham, scallions, sprinkle on the salt and pepper, to taste
Step 7: Stir-fry 1 minute until well combined.
