Ingredients

The ingredients are:
  • Crust:
  • 1 1/3 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup shortening ,crisco of course
  • 3 tablespoons water
  • Filling:
  • 4 ounces cheddar cheese, shredded ,(1 cup)
  • 4 ounces mozzarella cheese, shredded,(1 cup)
  • 4 ounces ricotta cheese,(1 cup)
  • 1/4 pound mushrooms, chopped
  • 2 tablespoons onion, minced
  • 1 tablespoon butter
  • 5 ounces canned salmon, flaked, drained ,(1/4 cup)
  • Topping:
  • 4 tomatoes, thinly wedged
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/4 cup green onions, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Pastry:

  • Step 2: Mix pastry and roll out on floured board.

  • Step 3: Line a 9-inch pie tin.

  • Step 4: Prick dough and blind bake 425 for 10 minutes until lightly browned

  • Step 5: Filling:

  • Step 6: Saute mushrooms and onions in butter until browned

  • Step 7: Combine Cheddar, mozzarella, ricotta, chopped onions, mushrooms and salmon.

  • Step 8: Spoon into pie shell.

  • Step 9: Topping:

  • Step 10: Arrange tomato wedges on top in a tight overlapping circular pattern.3 circles

  • Step 11: Sprinkle with herbs, salt and pepper to taste

  • Step 12: Bake at 325 degrees F for 20 minutes.

  • Step 13: Cool for 15 minutes before serving
