Ingredients

The ingredients are:
  • 4 (2 ounce) slices wheat bread
  • 8 (1/2 ounce) slices cheddar cheese, reduced fat
  • 2 1/2 tablespoons apricot preserves
  • 2 tablespoons mayonnaise
  • 2 1/4 teaspoons chipotle chiles, canned in adobo sauce and chopped
  • 4 green leaf lettuce leaves
  • 1 1/2 cups chicken, cooked, skinless and boneless, shredded
  • 2 bacon slices, cooked and crumbled

How to Make

  • Step 1: Preheat broiler to high.

  • Step 2: On a baking sheet arrange the bread in a single layer. Broil for one minute on each side or until toasted.

  • Step 3: Place 2 cheese slices on each bread slice. Broil one minute or until cheese melts. Remove from oven.

  • Step 4: In a bowl combine the preserves, mayonnaise and chipotle. Top each bread slice, cheese side up, with 1 tablespoon of the mixture and 1/3 cup chicken. Sprinkle crumbled bacon over each serving.
