Ingredients

The ingredients are:
  • Toast:
  • 4 ounces 12 grain bread ,(4 slices)
  • 2 tablespoons butter
  • Eggs:
  • 4 eggs,(I would use 6)
  • 3 tablespoons butter
  • 1 tablespoon chives, minced
  • 1/2 ounces cheddar cheese, shredded (2 tablespoons)
  • 4 ounces smoked salmon
  • ½ lemon, or lime
  • 1/4 teaspoon maldon salt
  • 1/4 teaspoon freshly milled black pepper

How to Make

  • Step 1: Toast the wholemeal bread and spread with a little butter.

  • Step 2: Melt the knob of butter in a thick-bottomed saucepan on a medium heat.

  • Step 3: Now add the eggs, but do not whisk.

  • Step 4: Using a plastic or wooden spoon, stir gently and slowly breaking the yolks away from the whites, so that when cooked you see strands of egg white and yolk.

  • Step 5: Remove from heat and cover with a lid for a few minutes.

  • Step 6: Remove lid, stir and season well and taste.

  • Step 7: Now add the grated cheese and the chives.

  • Step 8: Serve onto the warm buttery toast.

  • Step 9: Top with the smoked salmon and squeeze the lemon over.

  • Step 10: Finally, grind some black pepper on top of the salmon and serve.
