Step 1: Cook potatoes in heavily salted boiling water
Step 2: Drain
Step 3: Mash potatoes until no lumps remaining
Step 4: Beat in half and half slowly
Step 5: Stir in cheese, salt, nutmeg, pepper ( to taste on seasoning)and egg yolks.
Step 6: Beat egg whites until stiff
Step 7: Fold into potato mixture
Step 8: Pour into ungreased 1 1/2 quart baking dish or souffle dish.
Step 9: Cook uncovered in 375 degree oven until golden brown, about 45 minutes
