Ingredients

The ingredients are:
  • 2 pound potatoes, peeled, chunked (6)
  • 8 ounces light cream,(3⁄4cup) ,half-and-half
  • 4 ounces parmesan cheese,(1⁄2 cup), grated
  • 1/2 teaspoon salt
  • 1⁄4 teaspoon nutmeg
  • 1⁄4 teaspoon pepper
  • 3 eggs, separated

How to Make

  • Step 1: Cook potatoes in heavily salted boiling water

  • Step 2: Drain

  • Step 3: Mash potatoes until no lumps remaining

  • Step 4: Beat in half and half slowly

  • Step 5: Stir in cheese, salt, nutmeg, pepper ( to taste on seasoning)and egg yolks.

  • Step 6: Beat egg whites until stiff

  • Step 7: Fold into potato mixture

  • Step 8: Pour into ungreased 1 1/2 quart baking dish or souffle dish.

  • Step 9: Cook uncovered in 375 degree oven until golden brown, about 45 minutes
