Ingredients

The ingredients are:
  • 1 cup uncooked rolled oats, (instant or regular)
  • 1 1⁄4 cups boiling water
  • 1⁄2 cup butter
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1⁄2 cups flour
  • 1 1⁄2 teaspoons baking soda
  • 1⁄2 teaspoon salt
  • 3⁄4 teaspoon cinnamon
  • 1⁄4 teaspoon nutmeg
  • Topping:
  • 1⁄4 cup butter, melted
  • 1⁄2 cup brown sugar, packed
  • 3 tablespoons evaporated milk,(canned)
  • 3/4 cup walnuts, chopped
  • 1/4 cup coconut flakes

How to Make

  • Step 1: Preheat oven to 350.

  • Step 2: CAKE:

  • Step 3: In a shallow bowl

  • Step 4: Combine rolled oats and boiling water.

  • Step 5: Let stand for 20 minutes.

  • Step 6: Using a mixer, cream butter until creamy.

  • Step 7: Gradually beat in sugars, and beat until light.

  • Step 8: Blend in eggs and vanilla.

  • Step 9: Mix flour, baking soda, salt, and spices.

  • Step 10: Remove beaters from creamed mixture.

  • Step 11: Stir in rolled oat mixture.

  • Step 12: Fold in flour mixture.

  • Step 13: Blend well.

  • Step 14: Pour batter into a greased and floured Pam sprayed 9" square cake pan.

  • Step 15: Bake for 45-55 minutes Remove from oven, but DO NOT REMOVE CAKE FROM PAN.

  • Step 16: TOPPING:

  • Step 17: Combine all melted butter. brown sugar, canned milk , coconut and nuts.

  • Step 18: Spread over the hot cake.

  • Step 19: Return the cake to the oven, under the broiler.

  • Step 20: Broil until the topping is bubbly and tinged with gold.

  • Step 21: Watch it as it will burn easily.
