  • 4 eggs,beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 ounce sour cream ( 1 tablespoon)
  • 1 teaspoon fresh parsley, minced
  • 1 teaspoon fresh cilantro, minced
  • 1 green onion, minced
  • Topping:
  • 8 ounces mozzarella cheese, shredded
  • 1 cup tomato,sliced

How to Make

  • Step 1: Heat oil and butter in skillet

  • Step 2: Add diced chicken

  • Step 3: Season to taste

  • Step 4: Add mushrooms cook until lightly browned

  • Step 5: Meanwhile beat egg mixture together

  • Step 6: Pour into cooked chicken mixture

  • Step 7: Cover and cook on simmer until almost set

  • Step 8: Place sliced tomatoes all over the top

  • Step 9: Cover with cheese

  • Step 10: Cover and let cheese melt

  • Step 11: Cut into 4 slices
