Ingredients

The ingredients are:
  • 3 eggs
  • 1 tablespoon milk
  • 1 tablespoon butter
  • 1 teaspoon lemon zest,finely grated
  • 1/16 teaspoon ground nutmeg
  • 1/4 teaspoon freshly cracked black pepper, to taste
  • 1/4 teaspoon sea salt ,to taste
  • 1/2 teaspoon chives, minced
  • 1 can (3 ounces) kippers , drained,heated

How to Make

  • Step 1: Whisk the eggs and milk in a bowl until thoroughly mixed, and add salt to taste.

  • Step 2: Heat the butter or can use olive oil in a small frying pan on a low medium heat.

  • Step 3: Add the egg mixture and turn the heat even lower as you slowly stir the eggs with a spatula, making sure they don’t stick to the bottom of the pan.

  • Step 4: Just before they begin to properly set

  • Step 5: Add the lemon zest, nutmeg and, if you like, extra seasoning

  • Step 6: Top them with pepper and garnish with the chives and Kippers on side
