Step 1: Whisk the eggs and milk in a bowl until thoroughly mixed, and add salt to taste.
Step 2: Heat the butter or can use olive oil in a small frying pan on a low medium heat.
Step 3: Add the egg mixture and turn the heat even lower as you slowly stir the eggs with a spatula, making sure they don’t stick to the bottom of the pan.
Step 4: Just before they begin to properly set
Step 5: Add the lemon zest, nutmeg and, if you like, extra seasoning
Step 6: Top them with pepper and garnish with the chives and Kippers on side
