Step 1: Heat the oil in a medium pot over medium heat. Add the onion, carrot, zucchini, and pine nuts. Cook for 5 minutes, uncovered, stirring occasionally, until the onions are softened. Stir in the rice. Add the water, and salt and pepper to taste. Stir well to mix. Cover.
Step 2: Raise the heat to high and bring to a boil. Lower the heat to low-medium. Cook, covered at a low boil for 35 - 40 minutes until tender. Taste for seasonings.
