Ingredients

The ingredients are:
  • 2 tablespoons peanut oil
  • 1 medium onion, finely chopped
  • 1 medium carrot, peeled and finely diced
  • 1 small zucchini, finely diced
  • 1/4 cup pine nuts
  • 1 14 ounce box basmati rice, about 2 cups
  • 5 cups water
  • Salt and pepper

How to Make

  • Step 1: Heat the oil in a medium pot over medium heat. Add the onion, carrot, zucchini, and pine nuts. Cook for 5 minutes, uncovered, stirring occasionally, until the onions are softened. Stir in the rice. Add the water, and salt and pepper to taste. Stir well to mix. Cover.

  • Step 2: Raise the heat to high and bring to a boil. Lower the heat to low-medium. Cook, covered at a low boil for 35 - 40 minutes until tender. Taste for seasonings.
