Ingredients

The ingredients are:
  • 3 pounds beef shank
  • 6 cups beef broth
  • 2 cup red cabbage, chopped
  • 8 ounces dried red kidney beans
  • 1 can (15 ounces)crushed tomatoes
  • 1 cup onion, chopped
  • 3 carrots , peeled,sliced
  • 1 parsnip, , peeled sliced
  • 3 cloves garlic, smashed
  • 2 stalks celery, sliced
  • 1 cup green bell pepper
  • 2 bay leaves
  • 1 teaspoon paprika
  • 1 teaspoon ground caraway
  • 1/2 teaspoon hot paprika
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground pepper ,( 5 berry)
  • 1/2 cup fresh parsley, chopped

How to Make

  • Step 1: Soak beans night before

  • Step 2: Drain next day

  • Step 3: Meanwhile next day

  • Step 4: In stock pot heat oil add beef shank that you have lightly seasoned

  • Step 5: Brown on all sides

  • Step 6: Add onion cook until translucent

  • Step 7: Add spices

  • Step 8: Add beef broth

  • Step 9: Cook for 2 hours

  • Step 10: Add drained beans and rest of ingredients except parsley

  • Step 11: Simmer for 90 minutes adding water as needed

  • Step 12: Last 5 minutes add parsley
