Ingredients

The ingredients are:
  • 18 ounces enriched sourdough bread, sliced (to equal 12 slices. Weight is a guestimate)
  • Butter, softened
  • 1 1/2 pounds roast beef, thinly sliced (can use deli or homemade)
  • 6 ounces Monterey Jack or Pepper Jack cheese (to equal Six 1-ounce slices)
  • 6 ounces mild Cheddar cheese (to equal Six 1-ounce slices)
  • 6 lettuce leaves
  • Red onion (12 thin slices)
  • Guacamole
  • 2 avocados, mashed
  • 3 tablespoons white onions, chopped
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 small tomato, peeled, seeded and chopped

How to Make

  • Step 1: Toast bread (being careful, not to over-toast); lightly butter.

  • Step 2: Place 4 ounces of roast beef on each of 6 slices of toast. Top each with 1 slice of Monterey (or Pepper Jack) and Cheddar cheese. Heat under broiler until cheese begins to melt.

  • Step 3: Place lettuce leaf and 2 red onion slices on each of the remaining toast slices. Top cheese slice with 1/3 cup of Guacamole. Serve both slices open faced per plate where person can finish assembly themselves or assemble it directly and plate.

  • Step 4: Combine all ingredients (make it at the time the sandwiches are made to prevent it from getting brown).
