Step 1: Toast bread (being careful, not to over-toast); lightly butter.
Step 2: Place 4 ounces of roast beef on each of 6 slices of toast. Top each with 1 slice of Monterey (or Pepper Jack) and Cheddar cheese. Heat under broiler until cheese begins to melt.
Step 3: Place lettuce leaf and 2 red onion slices on each of the remaining toast slices. Top cheese slice with 1/3 cup of Guacamole. Serve both slices open faced per plate where person can finish assembly themselves or assemble it directly and plate.
Step 4: Combine all ingredients (make it at the time the sandwiches are made to prevent it from getting brown).
