Ingredients

The ingredients are:
  • 1 1/2 pounds ground beef
  • 16 ounces dry linguine
  • 1 can(10 ounces) rotel tomatoes
  • 1 cup onion, chopped
  • 2 garlic cloves, smashed
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 8 ounces cheddar cheese, shredded
  • 2 jalapeno peppers , seeded, minced
  • 2 tablespoons fresh cilantro, minced

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Heat water to boiling

  • Step 3: Brown the ground beef with the onions,jalapenos,and garlic.

  • Step 4: Add the tomatoes.

  • Step 5: Cook the linguine for about 6 minutes,

  • Step 6: In heavily salted boiling water

  • Step 7: It will finish cooking when it is baked.

  • Step 8: Keep a 1 cup of pasta water

  • Step 9: Drain

  • Step 10: Melt the butter in a saucepan.

  • Step 11: Whisk in the flour.

  • Step 12: Season lightly to taste

  • Step 13: Add the milk and whisk until thickened.

  • Step 14: Add the cheese and stir until melted.

  • Step 15: Combine the ground beef, linguine and cheese sauce together.

  • Step 16: Add enough pasta water not to be dry

  • Step 17: Add the cilantro.

  • Step 18: Add salt and pepper to taste.

  • Step 19: Pour mixture into 2 greased Pam sprayed casserole dishes evenly

  • Step 20: Bake for 15 - 20 minutes until it starts to bubble and brown.

  • Step 21: If you made this ahead and it is coming from the refrigerator it will take 45 minutes to bake.
