Step 1: Preheat oven to 400 degrees F (200 degrees C) and line a muffin pan with paper liners.
Step 2: In a bowl add the cheese, and the next 5 ingredients (-mint) along with 1/4 teaspoon salt and 1/4 teaspoon white pepper.
Step 3: In another bowl whisk together the wet ingredients (eggs - yogurt) and then stir the wet ingredients into the dry ingredients, stirring just until combined. DO NOT OVERMIX.
Step 4: Spoon batter into the muffin cups and bake for 20 minutes or until the tops are golden and a toothpick inserted into the center of a muffins comes out clean.
