Ingredients

The ingredients are:
  • 1 1/3 cups halloumi cheese (150 g)
  • 1 1/3 plus 1 tablespoon flour (175 g)
  • 1/2 cup whole wheat flour (50 g)
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons nigella seeds
  • 1 1/2 teaspoons mint, dried
  • 2 eggs, beaten
  • 7 tablespoons olive oil
  • 2/3 cup Greek yogurt, plain
  • Salt
  • Pepper

How to Make

  • Step 1: Preheat oven to 400 degrees F (200 degrees C) and line a muffin pan with paper liners.

  • Step 2: In a bowl add the cheese, and the next 5 ingredients (-mint) along with 1/4 teaspoon salt and 1/4 teaspoon white pepper.

  • Step 3: In another bowl whisk together the wet ingredients (eggs - yogurt) and then stir the wet ingredients into the dry ingredients, stirring just until combined. DO NOT OVERMIX.

  • Step 4: Spoon batter into the muffin cups and bake for 20 minutes or until the tops are golden and a toothpick inserted into the center of a muffins comes out clean.
