Step 1: Preheat oven 325-degrees F.
Step 2: Remove bony pieces from salmon, breaking up with a fork
Step 3: In a large bowl combine salmon, bread crumbs, celery, onion and green pepper.
Step 4: Separately mix lemon juice, evaporated milk, egg, salt and pepper. Mix with spoon into salmon mixture.
Step 5: Pack into greased loaf pan and bake for 45 minutes.
Step 6: Combine mayonnaise, flour, reserved juices, salt and milk in a small saucepan. Cook, stirring constantly, until thickened.
Step 7: Add olives and almonds. Serve separately with salmon loaf.
