Ingredients

  • Salmon Loaf
  • 1 16 ounce can salmon, juices drained and reserved
  • 1 cup fine bread crumbs
  • 1/2 cup celery, finely cut
  • 1/4 cup onion, finely chopped
  • 1/4 cup green pepper, finely chopped
  • 1 1/2 teaspoons lemon juice
  • 12 ounces evaporated milk (recipe indicates 1 large can, so I believe it's the 12 ounce size)
  • 1 egg, beaten
  • Dash of salt, to taste
  • Freshly ground pepper, to taste
  • Sauce
  • 1/4 cup mayonnaise
  • 1 tablespoon flour
  • 1/4 teaspoon salt
  • Small can evaporated milk
  • 1/2 cup reserved juices, plus water if necessary
  • 1/4 cup stuffed green olives, sliced
  • 1/4 cup almonds, chopped

How to Make

  • Salmon Loaf

  • Step 1: Preheat oven 325-degrees F.

  • Step 2: Remove bony pieces from salmon, breaking up with a fork

  • Step 3: In a large bowl combine salmon, bread crumbs, celery, onion and green pepper.

  • Step 4: Separately mix lemon juice, evaporated milk, egg, salt and pepper. Mix with spoon into salmon mixture.

  • Step 5: Pack into greased loaf pan and bake for 45 minutes.

  • Sauce

  • Step 6: Combine mayonnaise, flour, reserved juices, salt and milk in a small saucepan. Cook, stirring constantly, until thickened.

  • Step 7: Add olives and almonds. Serve separately with salmon loaf.
