Ingredients

The ingredients are:
  • 4 tablespoons butter, unsalted and melted plus some additional butter for the pan
  • 3 eggs
  • 1/4 cup sugar
  • 1 tablespoon vanilla
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/4 cup honey
  • 2 cups long grain rice, cooked and cooled to room temp
  • 1/2 cup raisins or dried apricots
  • 1/2 cup apple butter

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Butter a 1 1/2 quart baking dish.

  • Step 3: In a bowl whisk tougher the first 7 ingredients (butter -honey) until smooth. Stir in the rice and raisins (or apricots).

  • Step 4: Spoon mixture into prepared baking dish. Spoon apple butter over the mixture (about 6 dollops) and then swirl in the apple butter with a knife or chopstick. DO NOT OVER MIX OR YOU WILL NOT SEE THE SWIRLS.

  • Step 5: Bake for 35-45 minutes or until it is puffed and browned on top. Let cool 5 minutes and then brush with more honey and sprinkle with sea salt.
