  • 1/2 cup mayonnaise
  • 1/2 cup buttermilk
  • 2 tablespoons oil
  • 2 cups yellow cornmeal
  • 1/4 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

How to Make

  • Step 1: In large bowl,

  • Step 2: Beat the eggs, mayonnaise, buttermilk and oil until smooth.

  • Step 3: Combine the cornmeal, sugar, baking powder and salt

  • Step 4: Add to egg mixture and beat just until combined.

  • Step 5: Grease and Pam spray a round 8 inch baking dish; dust with cornmeal.

  • Step 6: Add batter.

  • Step 7: Bake at 425° for 15 minutes or until a toothpick inserted in the center comes out clean.
