Step 1: Either pound or slice the chicken breast the long way so it's about 1/4 inch thick.
Step 2: Heat oil and half of the butter in cast iron pan.
Step 3: Mix crumbs, cheese and seasonings in a shallow dish or plate.
Step 4: Put chicken in crumb mixture and cover both sides.
Step 5: Place chicken in hot pan. Cook on medium high until browned, turn and repeat.
Step 6: A little squeeze of lemon adds a bright touch!
Step 7: Turn heat to low. By the time broccoli is done, there should be no pink in center of chicken.
Step 8: Steam broccoli while chicken cooks or heat up left over broccoli in microwave.
Step 9: Melt the remaining butter, pour over broccoli and season to taste.
