Ingredients

  • 8 eggs
  • 8 tablespoons water
  • 1/16 teaspoon salt
  • 1/16 teaspoon pepper
  • 4 tablespoons butter, for frying
  • Filling:
  • 4 ounces mushrooms (sliced)
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper pepper
  • Garnish:
  • 1 tablespoon fresh parsley, minced
  • 8 slices tomato

How to Make

  • Step 1: Break two eggs into a bowl

  • Step 2: Beat well with 2 tablespoons water and seasoning to taste.

  • Step 3: Melt a tablespoon of butter in a frying pan

  • Step 4: When hot, pour in egg mixture.

  • Step 5: Allow the omelette to set and brown on the underside, then fold.

  • Step 6: Turn on to a serving plate.

  • Step 7: Make 3 more omelettes in the same way.

  • Step 8: Filling:

  • Step 9: Melt butter in pan

  • Step 10: And saute sliced mushroom for 1 minute.

  • Step 11: Add flour and cook for 1 minute.

  • Step 12: Remove from heat and stir in milk.

  • Step 13: Return to heat and bring to boil

  • Step 14: Stirring.

  • Step 15: Season to taste.

  • Step 16: Divide mixture into four and put filling in omelette before folding.

  • Step 17: Garnish with parsley and tomato slices.
