Ingredients

The ingredients are:
  • 1/2 cup butter, (1 stick, 4ounces)
  • 1/2 cup vegetable shortening (3 1/2 ounces)
  • 1/2 cup granulated sugar (3 1/2 ounces)
  • 1 cup brown sugar (8 ounces)
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 large egg
  • 6 tablespoons light corn syrup (4 1/8 ounces)
  • 2 tablespoons milk (1 ounce), regular or low fat, not nonfat
  • 3 cups quick-cooking oats or old fashioned rolled oats (10 1/2 ounces) pulsed in a food processor, to make smaller, thinner flakes
  • 1 1/2 cups unbleached all-purpose flour (6 1/4 ounces)
  • 1 cup raisins (5 1/4 ounces)
  • 1 cup pecans or walnuts, chopped (4 ounces)

How to Make

  • Step 1: Preheat oven to 375-degrees F. Lightly grease (or line with parchment) two baking sheets.

  • Step 2: In a large bowl, cream together the butter, shortening, sugars, extracts, spices, salt, and baking soda, beating until fairly smooth. Beat in the egg, scraping the bowl, then beat in the corn syrup and milk. Stir in the oats, flour, raisins, and nuts.

  • Step 3: Drop the dough by the tablespoonful onto the prepared baking sheets. Bake the cookies for 11 minutes, until they're a light golden brown. Remove them from the oven and transfer to a rack to cool. Makes 45 cookies.
