The ingredients are:
  • Roasted cauliflower:
  • 8 cups cauliflower florets
  • 3 tablespoons olive oil
  • Soup base:
  • 2 tablespoons unsalted butter
  • 1 cup onion,finely diced
  • 1 tablespoon smoked paprika
  • 1 cup vegetable broth
  • 32 ounces heavy cream, (4 cups)
  • 1 cup milk
  • 8 ounces american cheese,(2 cups),shredded
  • 8 ounces fontina cheese,(2 cups ),shredded
  • Slurry :
  • 1 tablespoon cornstarch
  • 4 tablespoons cold water
  • Garnish:
  • 4 tablespoons chives, minced
  • 4 ounces parmesan cheese, grated,(1 cup)

How to Make

  • Step 1: Preheat oven to 400 degrees F

  • Step 2: Place cauliflower tossed with oil on Pam sprayed cookie sheet

  • Step 3: Roast for 20 minutes

  • Step 4: In large stock pot

  • Step 5: Heat butter

  • Step 6: Add onions

  • Step 7: Cook until translucent

  • Step 8: Add paprika

  • Step 9: Add 1/2 roasted cauliflower ,put rest back in oven to keep warm

  • Step 10: And veggie stock and milk

  • Step 11: Simmer 10 minutes

  • Step 12: Use stick blender to make creamy

  • Step 13: Add cream

  • Step 14: Simmer 5 minutes

  • Step 15: Gradually add cheese starting with American

  • Step 16: Then add fontina stirring

  • Step 17: Add slurry

  • Step 18: Add roasted cauliflower and oil

  • Step 19: Heat until thickened

  • Step 20: Put in bowls garish with chives and parmesan cheese
