Step 1: Preheat oven to 400F.
Step 2: Peel and core the pineapple. Cut into cubes and place in a bowl. Will need about 4 cups of pineapple. Add the rum and stir to coat the pineapple cubes. Pour into an 8x8 baking dish.
Step 3: Combine flour and sugar in a bowl. Cut the butter in with a pastry blender or a fork. Until the mixture is crumbly. Add the coconut and cookie crumbs. Stir to combine. Sprinkle evenly over the pineapple.
Step 4: Bake for 30 minutes or until golden. Serve warm with a scoop of ice cream. Coconut ice cream takes it over the top. See my recipe #39321 Super Easy Coconut Ice Cream.
