  • 2 whole roasted red peppers, from a jar
  • ⅔ cup fresh basil leaves
  • 1 1/2 tablespoons lemon juice
  • 3 cloves garlic, peeled and halved, or more to taste
  • 1 1/2 cups light mayonnaise
  • 2 teaspoons white sugar
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste

How to Make

  • Step 1: Drain jarred roasted red peppers. If they're too wet, your aioli will be quite thin.

  • Step 2: Place peppers and basil in a food processor; pulse until coarsely chopped and combined.

  • Step 3: Add lemon juice; pulse 3 times.

  • Step 4: Scatter garlic halves over mixture; pulse to chop, 4 to 5 times.

  • Step 5: Add mayonnaise and sugar; pulse until smooth, 5 to 7 times.

  • Step 6: Season with salt and pepper.

  • Step 7: Taste - add extra lemon juice if desired.
