Step 1: Drain jarred roasted red peppers. If they're too wet, your aioli will be quite thin.
Step 2: Place peppers and basil in a food processor; pulse until coarsely chopped and combined.
Step 3: Add lemon juice; pulse 3 times.
Step 4: Scatter garlic halves over mixture; pulse to chop, 4 to 5 times.
Step 5: Add mayonnaise and sugar; pulse until smooth, 5 to 7 times.
Step 6: Season with salt and pepper.
Step 7: Taste - add extra lemon juice if desired.
